Project Overview:
In this project, Grade 8 students will become culinary designers for Singapore Airlines. Their task is to create a culturally authentic in-flight meal that reflects Singapore’s unique flavours while meeting the airline’s standards for quality, nutrition, and cost. Each student will be randomly assigned a seating class—either Economy or Business—which will dictate their meal budget, ingredients, and presentation style, challenging them to balance cost and nutrition.
The project begins with an exploration of Singapore’s culinary heritage, covering Malay, Chinese, Indian, and Peranakan influences. Students will research and visit a local hawker centre, selecting and analysing a traditional Singaporean dish. This analysis will inspire their in-flight meal design, adapted to airline standards for safety, cost, portion size, and in-flight suitability.
